When receiving email, do DKIM verification early, before you modify the
content in any way.

When sending email, do DKIM signing last, after making all modifications,
and typically also downgrading to a 7bit encoding so that signatures don't
break downstream, though at some point receiving system that don't support
8BITMIME really need to be phased out, I don't think that EAI is compatible
with 7bit downgrades, and if that's ever going to happen, mail systems need
to be 8bit clean.
