Sort of depends on how fancy you want to get. Getting a mail installation working, complete with anti-spam and antivirus scanning, can get a bit complicated - but running without antispam is just asking for trouble. And that's before you add a POP or IMAP server. Then again, it's an excellent learning experience.

For POP and IMAP, I've found the uw-imapd and uw-ipopd easier ot work with than dovecot, but your mileage may vary.

And if you want to support lists, look at at Mailman (www.list.org) and Sympa (www.sympa.org)
