As a GENERAL starting place, I'd check out one of the "Perfect Server" setups on HowTo Forge for CentOS. It will walk you through setting up Dovecot and Postfix. However, Postfix 2.3.3 is what installs from the CentOS default repos, and the latest version (2.8) has vast improvements.
