You can use google apps for mail and still run your own web
server. Just point your MX records at google and point www.
to somewhere else.

Sure, but understand that postfix is only part of the puzzle
(and probably the easiest part) of what you'll need to run a
mail server. You'll also need a POP/IMAP server (I suggest
dovecot), and you might even want webmail service (roundcube
or squirrelmail)
Running a mail server is not a trivial task. If you want
something that "just works" go with google apps. If you want
full local control and don't mind spending ongoing time
fiddling with it, postfix is a fine starting place.
