The most important decision is whether to replace the vendor-provided package with a newer build, or to install a separate Postfix built in /opt/postfix or similar, and just not use or even de-install the vendor-provided Postfix. I am running Postfix out of /opt, with just "alternatives" symlinks for /usr/sbin/sendmail.
