I'm pretty sure that portsnap extracted properly (it seemed to -- and it
installed a newer version of mysql, which is what I was looking for), so no
idea why 2.5.1 isn't showing up in my tree.
You're looking at the incorrect port.
/usr/ports/mail/postfix should be the 2.5.1 version. Check out the
contents of /usr/ports/mail/postfix/distinfo.
