I'm no expert either but being the first to respond i might as well ask the
obvious ones first to get the ball rolling...

what flavour linux is running on the server?
what version of windows?

you could probably set up a samba share on the linux box and allow the
windows box access and then set up a scheduled task from windows to copy
files down on a schedule, i'm not sure how to handle incremental backups tho
via scripting on either windows or linux. i also dont have any experience
backing up MySQL databases either,

If you can answer the above someone better might come along.
