Sounds like you probably want to replace, or wrap, your editor rather
than mucking about with various macros for various keys...

*Anything* is possible in the mutt world :-)  What about creating a
shell script par-vim-par.sh that runs par on the file it's handed,
calls vi[m] on it, and then runs par again before exiting?  You'd
simply modify your "set editor=" line to call that script instead.
