While there may be some "From: j...@example.com via j...@gmail.com", I think in some cases it is possible to do (they want to embrace you, remember?). As an additional feature, at one point you might want to add a disclaimer at the top like "You need to reply to ...@... not to any other address" when rewriting transports. However, I suspect the more immediate issue will be that these providers are precisely those that will require OAuth dances, which are not so widely implement, since they are not as straightforward. Sometimes you can sidestep them with an App password, but that itself may have its own requisites (such as enabling a phone-based 2FA).
