Regarding sound quality from iPod or iPhone. If you use the lightning output 
into a docking station like Pure i20, and optical out from the dock into 
optical in on an amplifier you may not hear any difference. Because the IOS 
device only sends digital signal out and do not convert anything at all. On 
Pure i20 you need a usb to lightning adapter from Apple to make it work with 
lightning connector. 

Analog out from a IOS device i.e. out from the 3.5» mini jack its another story.

To get the iTunes Plus higher quality songs when you are subscribed to iTunes 
Match, do the following:

1.  Go into iTunes.
2.  Select the Songs view.
3.  Select the songs you wish to upgrade.
4.  Press the Delete key.
5.  Pay attention to the dialog that appears and make sure that you don't 
delete the songs from the Cloud as well.
6.  Once they've been deleted, there should now be a Download button right to 
the right of the song title.  Press it for each song.

The higher quality version will download from Apple.  There are quick ways to 
manage this sort of thing by sorting your Library by Kind, iCloud Status and 
such then doing actions on multiple items..

Also, regarding sound quality, note that the sound output devices in iPods are 
not to the quality that you can get out of a laptop or Desktop computer, so 
sound quality may be less when playing to amplifier units as the less quality 
is also amplified.
