Start with VO-h.  That is the main help menu and contains all of the ways to 
get help, including commands help and the getting started guide.  It is the 
best place to start.  

    Adding additional languages for VoiceOver is done through the VoiceOver 
Utility under the Speech category in the Voices tab.  You need to select the, 
Custom, from the default voice popup button and then use the table that will 
next be presented to choose the other voices you desire.  Check the boxes of 
the ones you want.  There is a, play, button to the right for samping voices.  
When you have made your selections, choose the, OK, button, to download the 
voices.  Be aware that some of the voices are large, so they might take some 
time to download.

   Once you have them, you can choose them from the popup button or, as an 
easier alternative, you can use control-option-command-right or left arrow 
until you get to, Efault Voice.  Then use control-option-command-up or down 
arrow to change the voice.
