There’s no trick: Apple pairs the Bluetooth keyboards they supply with their machines at the factory. Yes, it was a surprise to me too, but that’s clearly what’s happening. Otherwise an onscreen animation prompts you to connect a keyboard and trackpad/mouse, and you will have to have one of each. As Jason says, it need not be Apple hardware.
