I weighed mine as Larry indicated with just one home bathroom scale. It does
take more time, but doesn't cost any extra. I leveled the airplane at each
stage.

It would take more work but you only need one really good scale. Build extra
platform/s the same height/thickness as the one scale when placing under
mains or nose gear to keep your airplane level. Obviously you would have to
move the plane and scale two more times after your first setup, to weigh all
three landing gear independently.
