a)Regarding the applications:

1. Libreoffice - Free productivity Office suite
2. Thunderbird
3. Banshee
4. Wine ( if there is compulsory necessity to run win apps)
5. VLC
6. GIMP
7. Google Earth (for educational purposes)
8. Filezilla ( a nice FTP)
 and more..

c) Customizing Debian - Im not sure if you would like to customize the User
Interface or OS, if you are talking about effects, i guess compiz is a good
start for user interface customizationa and effects.

d)github and sourceforge are very nice place to host projects, Git is
becoming more popular and widely used these days.
Apart from these two, http://www.codeplex.com/ and
http://code.google.com/hosting/ are nice place to host open source project.
