There's that, and also the fact that no two mentors have the same level of experience anyway, so what you describe is possible within the current structures, just isn't formalised.
I guess I would encourage you to do as Luciano suggests, and to chat to mentors on a project that you might help with. It is not uncommon for mentors to feel stretched, and thus might appreciate some help with their mentoring duties.
