Dan, How do you want to display the output of the 3 measurements? If you want 3 different numbers displayed simultaneously then it may be best to get 3 cheap automotive digital amp meters and use 3 small DC/DC converters to power them and probably replace their shunts if they are not the correct range. If you want a single indicator with a 3-way switch then the easiest is a good old skool 50mV full scale needle meter that you connect through a double pole tree-position switch to 3 different shunts.
The blower should pull a more or less constant current, so I would not expect that you need an amp meter for that, more an indication "is it on?" which can be done with a simple circuit to detect the current flowing and lighting a lamp instead of displaying on a meter - do you expect the blower current to change? Not sure what you mean by the two motor shunts, I expect that there is a motor shunt to measure current through the motor and a battery shunt to measure how much it supplies to the controller, so you can see the input and output of the controller which are in relation to the PWM that the controller generates.
