Does anyone know of a Ammeter kit that could read from 3 different shunts?
I would like to have one at the blower, the drive motor and total coming
off where the two battery packs meet. I guess I could get away with two if
there was something that could measure both motor shunts simultaneously? If
not could I just hook up a two or 3 way switch and flip between them to see
output?

Do you want a meter that displays 3 different currents simultaneously (i.e. it has 3 displays)? If so, it may be easier to use 3 separate meters.

If you want one meter whose display can be switched between 2 or more shunts, and is able to do calculations on them, the Hearth Interface Link-20 (or whatever it is currently named since Xantrex bought the company) can do it. The Link-10 uses a dual 500-amp shunt, and can measure volts, amps, amphours, watthours, etc. on both of them. It is in effect two E-meters / Link-10 meters.
