Hi James, >From what I've used, Mint gives you the most "windows-like" experience out of the box; however, if you feel like starting from the ground up, plain 'ol Debian is a good choice.
If you feel like trying something new, I personally quite like RPM-based distros like RHEL (or RockyLinux), OpenSUSE, etc. Really, the pros and cons all whittle down to use-case and what you are comfortable with using. Plain Debian doesn't include much software, so keep in mind that utilities like sudo or curl are likely missing when you first use it. I'd also check your hardware has compatible drivers, especially graphics, if you're doing to go down that route.
