So it looks as if the problem relates to the confusing and duplicative way in which Thunderbird (and presumably Betterbird) deals with Settings / Preferences / Options (take your pick). Most of that problem was down to the fact that I thought I had selected 'No HTML' but I hadn't because: 1. There are two places to select it. 2. There is no positive way of applying the changes.
In particular, given your later emails, the double space I typed which you >-quoted remained as two spaces.
