the approach was always there even with Epson drivers - unless you use a specific application which bypasses CUPS, there was always a print queue matching to your printer. In general print queue is CUPS internal abstract representation of printer, but most docs and apps call 'print queue' as 'printer', since it is more understandable. The mentioned Fedora doc uses print queue, since it mentiones the real device 'printer' as well, so it has to show the difference in the text to do not cause misunderstandings.

In general if the printer is network, look in its specs (its docs, web ui or printer panel) for AirPrint, mDNS and IPP options - enable them and the device is picked by any up-to-date application (GTK3+ apps, Firefox, IIRC Qt can do it now too. AFAIK only chromium/Chrome default print dialog is not updated to work this way).

USB printer can work without driver if the device supports IPP-over-USB - check 'sudo ipp-usb check' - if the printer is shown in output, it is handled automatically and shown in applications the same as the network ones.

If neither of them work, you have to use Epson driver and install the print queue manually either by application, CUPS Web ui or CLI commands.

I assume that aside from the fact that the maintainer dropped the
packages for not using Epson printers in long time, there is also the
fact that the "classic" drivers support from CUPS will be dropped in
the near future...
