You have an old system with first gen i7 which predates widespread UEFI
adoption by at least 1 generation, your motherboard specs at

do not mention UEFI, only regular BIOS, so your system has no UEFI
support. Newer AMD GPUs do not work at all or work randomly on some
systems with legacy BIOS since RX 500 series, and you have a newer RX
5000 series card. Your system POSTs but after that you have a black
screen, which is standard in such incompatibilities (you'd see the same
on Windows).

So it's probably not GRUB and not your PSU, but hardware
incompatibility, so as per my earlier post your course of action is:
-upgrade/new pc
-trying with two GPUs
-mucking about with BIOS (I tried searching for your GPU and did not
found anything provided by MSI, so if you want to go this (dangerous)
route you can try by reading this thread:

but keep in mind that they are talking about even older GPUs and you can
destroy your GPU if something goes wrong).
