Nope not structural.  The tube in the sink is mounted under the sink and is
pretty much exclusively for the support of the shelves.  As I recall mine
isn't even mounted at the top and the open end only extends about an inch
into the ceiling.  I used mine as a conduit for the solar panel wires
coming from my dodger.

On boats with a swing keel there is a second tube in the salon table just
aft of the mast which looks quite similar to the one that is in the kitchen
sink.  I don't have this tube since I don't have a swing keel which leads
me to believe that it also is not structural.  It simply acts as a conduit
for the keel pennant.
