We had two boats at the Club with similar treatments.
A Hobie 33 that the owner did a gorgeous job of fairing in an
enclosed sweeping reverse transom (which we called a drake's tail)...
but it ruined the boat for one design racing.
The other is a Santa Cruz 50 with a bolt on sugar scoop. For me this
is the most practical as it can be very handy for dinghy boarding and
swim ladder placement when cruising and has the advantage of being
removable for whatever reason.

Anyone know of anybody who has done this? Our boatyard did 'fatten'
the aft area of a Baltic IOR style boat to make it less squirrely
under spinnaker and that worked well. They just glued a lot of foam
to the original hull, laid glass over it and faired it in. Made the
boat look a lot better and sail better as well.
