Most professional bakers here where I live bake their cakes at 325 degrees
instead of 350, which is usually indicated on the package, then they bake them
for about 15 minutes longer than called for, testing within a few minutes
after the time indicated on the package.

Aidabarba is right about the oven thermometer. Even a brand new oven can be
calibrated incorrectly. Turn the oven to 350 degrees (or whatever temp you
normally use where you live), then put the thermometer on a cookie sheet and
place both in the oven, middle rack. Give it a good 30 minutes, then come
back and see what the temperature reads. Then either re-adjust your time and
temperature, or call someone in to re-calibrate the dial.
