Do you mean that the new host should be picked for having similar character traits, or that after implantation, the new personality should be about the same as the old one?
I think both of those issues were dealt with during the course of the show. Ezri wasn't originally picked as the new host for the Dax symbiont, she was an emergency replacement since she was the only Trill on board the Federation starship that was taking Dax back to the Trill homeworld when Dax suddenly became seriously ill. Since Ezri didn't have the usual years of training, her adjustment process was more difficult than usual. That alone could account for differences in personality or character traits.
But also, it was established fairly early on that the personality of the joined Trill is a combination of the personality of the host and the personality of the symbiont. Dax has it's own personality, and Jadzia had her own personality, and the two meshed in a certain way. Ezri's personality was different from Jadzia's, so she meshed in a different way with Dax. It was established fairly early on and repeated throughout the series that Curzon Dax had a different personality from Jadzia Dax. The same was true of Tobin Dax, Audrid Dax (taxing my memory here), and especially of the Dax host who committed murder... hang on a sec, let me Google this... ah, yes, Joran Dax.
So yes, there should be at least a few similar character traits, and certainly all the memories should be there. But the personalities have all been different (in one case murderous) and Ezri Dax's was probably more different than the others because of Ezri's lack of training.
But I can certainly understand not necessarily liking the Ezri Dax personality, that's just personal taste. She would certainly never break into Odo's quarters while he was regenerating just to move all the furniture slightly just for the fun of ticking off Odo, like Jadzia Dax!
