I looked at the Debian bugs page and checked out the grave bug, but I couldn't tell if it applied to me or not. Either way, I uninstalled all me debian alsa stuff and downloaded the new alsa 1.0-rc2 source codes. After making and installing those, my sound seems to work ok (except for the options), so I dunno, I guess problem solved. I really I wish I coulda figured out what was wrong before though.

So anyways if you have this problem, try 1.0-RC2, maybe it'll help.

Have you checked Debian Bugs?

There's a grave functionality bug in alsa-base which sounds similar to the
problem you're reporting. If you don't want to wait for Debian's pending
fixed upload into unstable then compile and install the latest ALSA source
packages: alsa-driver, alsa-utils and alsa-lib.
