I would just use a Proxmox mail filter in front of a machine running webmin/virtualmin and that would gives you basic email functions pretty easily and manageable.

We also host email for some of our isp customers running a database backed exim/dovcot system with Proxmox mail filtering. Let me know if your interested its something we should be able to provide reasonably depending on the amount of customers.
