When I was looking, some people suggested SmarterMail, but I didn't do a trial. Maybe someone here is familiar with it.
If you want just a barebones SMTP/IMAP/POP3/webmail server you may want to roll your own like the old days. Postfix, Dovecot, Roundcube, SpamAssassin, ClamAV, MariaDB. Or believe it or not, there is a fork of the old Sun Cobalt software (now open source) still around and actively supported.
