That's why in my previous email, I started with default one-side page
layout and then switched to two-sides page layout by adding XSLT
stylesheet parameter two-sided="yes"

to the XSL customization file.
So my new question is, do changes I make in [book]map > convert document
temporarily take precedence over the defaults in Options > customize config? Not
important, but it could be good to know.
--> Easy method:
1) Open your DITA document and select "Options|Customize
Configuration|Customize Document Conversion Stylesheets". See
https://www.xmlmind.com/xmleditor/_distrib/doc/help/customizeConfigurationMenu.html
1) Select "Convert to PDF, PostScript" in the "Customize Document
Conversion Stylesheets" dialog box.
2) Select "(default)" from the "XSLT stylesheet" combobox See attached
select_default.png.
3) Click OK.
After your are done with the defaults, you'll be able to reselect your
XSL customization file (called "Custom page header and footer" found in
"~/tmp/fo_custom.xsl" in the attached screenshot) by applying the same
procedure.
--> Alternate, advanced, method allowing to associate an XSL
customization file to just *one* given DITA document and not to all your
DITA documents explained here: "How to automatically select a set of
custom stylesheets when converting a given document?",
This method involves inserting a <?xxe-stylesheet-set?>
processing-instruction in the DITA map or bookmap of interest.
