The default installation directory is on a 64-bit Windows:
"C:\Program Files (x86)\XMLmind_XML_Editor"
and on a 32-bit Windows:
"C:\Program Files\XMLmind_XML_Editor"

during your previous installation and InnoSetup considered this as
being the directory you prefer?
Yes, I think that I did. I do not recall the XXE 8.0.0 installer asking
me about where I wanted XXE to go this time. I will keep a look out for
what happens when I install XXE 8.1.0.
You probably installed XXE v8 without first uninstalling XXE v7, which
is OK.
Yes, I did. I wanted to keep XXE v.7.
We'll try to find a way to make InnoSetup always prompt the user for
an installation directory (rather than automatically reuse previous
installation directory).

(And, if you wouldn't mind, please let me know how you do it with
InnoSetup. I have two non-XXE-related applications that use InnoSetup
and noticed that InnoSetup used the same directory for both by default.
