You can define as many skins etc as you want .... the standard skin generates, I think, the mobile pages and the full pages - and has a link to mobile ones on the full size ones - but you can just as easily create whatever you want - the mobile pages actually are in a separate directory anyway.
Why not just have another pi, with a screen located elsewhere in the house, accessing the webpages created by the first which is connected to the weather station?? No need to be sending data between them - just put a refresh into the webpage template for the pages you create and then it will refresh every minute or whatever anyway....
