There is the official RPi touch screen display available

You can reduce the content of the standard webpages by using the mobile 
ones - they work pretty well - or customise the mobile ones to your own 
likings perhaps and have the wife use her phone instead of the console!

The outdoor sensors have, I believe, been read using a generic radio dongle 
- check the wiki - but you still need pressure from the indoor console or 
some other source (also indoor temp and humidity).

I have my rpi in a drawer also - but also run a webserver on the rpi, and 
just access the webpages from any pc or phone's browser over the network.  
I run the rpi without a display and access the command line interface via 
ssh over the network - cant be bothered to run the rpi GUI.
