I have my email program set to empty the trash folder after 1 day. If I
deleted it, it means I didn't want it and if it were an oops, 24 hours
should be more then enough time to retrieve it.

you can set it to delete upon quitting mail or after a specified time. go
the preferences choose account in the table and you find all settings in the
mailbox behaviours tab
