Well, just grabbing the first page I find when Googling this, according to http://support.google.com/mail/bin/answer.py?hl=en&answer=7401 messages will be deleted after approximately 30 days. The oldest message I have in my Trash folder is from December 20, 2012, and I've been using Gmail for years. Your All Mail folder will also contain anything that you assigned to any folder, so you may have things in there from quite a while ago. Also, if you recently deleted a message from 2010, it'll still hang around the Trash folder for a little while. I have no idea how often Google runs their garbage collection on their Gmail servers.
