Sorry, I have just shown how confused I can be.
So nautilus still was seeing my vfat system, even if partition table did not 
contains vfat anymore.
This just tells us that nautilus don't believe partition table... AFAIK is ok.
I did sudo mkfs /dev/sdb1 and from there, fdisk and nautilus are coherent.

Seems what original poster see, is now clearly spell in Hardy: you don't see 
results of changing partition table until reboot.
Don't really see what makes device busy, since I had unmounted /media/disk 
(maybe should have unmounted /dev/sdb).
