If you want to arrange the pip to be placed somewhere else on the screen recording - and you have the Luma Fusion app - simply insert the video 2 times in the time line, crop and fit the two videos on top of one another any way you like.. It is also possible to create pip with the free iMovie app. ( https://youtu.be/WgnuuMBd2hg) Sound and video quality is not an issue with an iPad - and you can use whatever headset (with a mike) that you prefer - or not ;-) - it all depends of the noise level in your environment..
