You inherit an airship when you start your new job - all the production servers were previously built by someone else, it's already in flight, you need to start maintaining it. You are not rebuilding systems on a regular basis - no there is no automated build process. You go to efforts of identifying all the services used by the system, and identifying processes to backup and/or migrate those services, but it's a huge complex system with lots of moving parts and tiny details. So you build a test system, cloned from the original, and even THAT took some weeks. I think you get the idea. Not easy to migrate. If I were building it myself, I would almost certainly do it on VMWare.
