Aside: John & others may find that for backups of iPhone & iPad the independent program called iMazing is easier and better than using iTunes. It’s what I now use for backing up my old iPhone SE and iPad Mini 4. Highly recommended. There was recently a brief discussion of it missing some of the more advanced features on this list. But it suffices for all of the basic functionality you would need. There are other apps, but you would need to work with their developers to have them build for iOS.
