You mentioned a "standard choice" as if you could set a global default. I want to know how to do that.

If that's not possible, I'd like SM to display what the sender sent -- if HTML, display HTML, if plain text, display plain text.

Display the menu bar, View > Message Body AS > check Plain Text.
