At the moment, on our server we don't delete anything. However, I do plan on eventually making mail with a score over 10 get deleted automatically. As it is, a fair number of our users have already set filters in eudora to trash mail above a score of 10 anyways. After bayes was running and fed well, I've never seen a false positive above 10.

However, one reason I feel I can do this is it's a small setup, with no more than about 20 users. They've also all been warned that we're going to do that, and to keep an eye out until I make the change for anything that does false-positive above 10 so we can look into that. So far nobody's reported one (of course, I'm firmly convinced most of them are more or less blindly deleting all mail tagged as spam). Basically what it comes down to for us is that the positive of having a large chunk of the spam automatically dealt with outweighs the fairly remote chance of deleting something that's not spam.
