I'm running all three in various places, and they've all got their pros and cons. Personally though, for a pass-through relay server, I'd probably lean toward Sendmail. With Sendmail's ability to do account lookups through LDAP, you can reject mail to invalid accounts right at the border. Coupled with a milter's ability to reject spam with a 550 error, rather than generating a bounce message, it can lessen the bandwidth used, keep the queue from piling up, and avoid sending bounce messages to innocent bystanders.


Postfix is capable of those as well, IIRC, and the learning curve is a bit less. :)
