Don't filter based on the subject line.

Filter on the X-Spam-Status header. "X-Spam-Status: Yes" means it is spam.

I think he meant that he didn't want to see the *** SPAM *** tag appear in the Subject: line. What he needs to do is add

rewrite_subject 0

in his user preferences, or the global prefs if he wants this change system-wide (which I gather is the case).
