Regarding acceleration, it may be worth noting that the
abovementioned bullock cart reaches its top speed in barely a few
seconds.
A long time ago on FoRK, I'd mentioned that ICE vehicles generally
have a lot more trouble with the vertical than hayburners:

However, I've heard that even a cow can jump a meter, so I wouldn't
be surprised if (modulo the lousy footing) any bullock would've
beaten the Unimog by 10 seconds or more.
