I can only report my experience to give you data.
I spent half of last summer (I'm a teacher) just riding around on my
Hunqapillar. It was never too beefy. The riding around meant paved or dirt with
no hesitation in transitioning from one to the other. There were many overnight
excursions
I know plenty of people astride NASA carbon and 23s who enjoy riding
possibly more than I do.
They wear dress loafers to the beach. I wear flip flops in the rain. We
still enjoy a beer together.

To follow up on Kellie's idea, a used Surly Troll would work. If that is
overkill, then look for a used 1980's Fuji mountain bike. My wife had one
in a small size in the late 1980's. Fit her very well. A lot of older
mountain bikes have longer top tubes. Keep that in mind when looking.

I second the notion of looking out for those long top-tubes. That's the
primary reason a vintage MTB won't work well for me.
If a Bombadil or Atlantis is what you want and it's financially feasible, I
say just go for it. If you have financial constraints you might consider

I don't ride in these Minnesota winters. Too many drivers are barely in
control of their cars on dry pavement in July, let alone on ice and snow. Plus
this winter has been remarkably cold even here, -20 lows every week since the
New Year. I'm not going riding in that.
