There could be various reasons why mails are not going out or
coming in & I have test scripts to send between my two postfix
servers; so why not monitor those test mails hourly?

mails never get lost without badly wring configuration somewhere
if something is filling your mailqueue with wrong addresses
verify them on insert, grep

My previous servers have all been dovecot 1.x. Trying to port over my
previous configurations has been a real headache.
