Hello Leo,
When you open Pages, you shouldn’t have to press anything. The application
should open with a blank template. Cmd-n is the command to show the Template
Chooser.

If you open Pages Preferences, under the General tab,, the first item allows
you to choose whether when opening a new document, you want to use the Template
Chooser or use the default template.

it kind of worked, but not as I expected. Whenever I launch pages, I
press command plus n, but instead of opening my custom template, the
template chooser shows up, so I press escape and press command plus n
again, and finally pages opens my custom template. I don't know why...

In Pages Preferences, I think you have to click on Change template and reselect
your preferred one then press Choose. Close Preferences and your chosen
template should be shown. Close the window and quit Pages, then reopen Pages
and all should be well.
This works for me under Mojave,
