Interesting is right. I’ve never known disabling smart addresses to do anything—certainly not show me email addresses, as promised. But there’s a convenient way to get the address. Interact with the “Header” area, and use VO-Shift-Left and VO-Shift-Right to precisely target the embedded sender’

That’s interesting. I am running macOS 15.2, Sequoia, and when I go to Mail Settings > Viewing, and turn off "Use Smart Addresses", the senders email address is displayed in the message header. Perhaps after turning off Use Smart Addresses, you should close, and then reopen the Mail app, and see
