I am running macOS 15.2, Sequoia, and when I go to Mail Settings > Viewing, and
turn off "Use Smart Addresses", the senders email address is displayed in the
message header.
Perhaps after turning off Use Smart Addresses, you should close, and then
reopen the Mail app, and see

I’ve so far failed to find the answer to this: how can I make Mail app on my
mac display the email address of the sender rather than just their name. I can
locate the headers, interact with them but I can’t seem to be able to find out
the email address of the sender. This is awkward. Any
