I get the pdf file in ~/mytunes/ and the ps and midi files in ~/mytunes/set1/
I really want the pdf with the other output and source in ~/mytunes/set1/

document included in the on-line documentation. They contain lots
of complete examples of what you can do with the program.
If you want a searchable collection of small examples, follow the link
to the LilyPond Snippet Repository
Just make sure that your text editor saves the file with UTF-8 encoding,
and everything should work.
For the italiano.ly, I hope that you really use the note names defined
in that file. I just tried with
\include "italiano.ly"
music={do re mi fa}
...
and didn't notice any problems.
