Perhaps I should be a little verbose, and say that GnuCash has its own
installation package available at www.gnucash.org. I'm not exactly sure why
you'd need to use a package manager to install it.

I use UniGetUI which uses WinGet and other package managers under the covers
but provides a helpful UI.
If I search for GnuCash in that I find that there are several providers of
GnuCash
The relevant ones are:
PackageIDVersion Source
gnucash
As Adrien elsewhere has mentioned WinGet is from MS, but WinGet can update more
than just Microsoft Store packages.
I think the details about how to get a package into the supported list is here

heading Submit package
Then you should ask the maintainers of winget when (or whether) they plan to
add GnuCash to their system.

Apparently random users have been updating a GnuCash manifest since 2021:
