Your accountant does not need account numbers. He will have his own software to
generate his workpapers. He can work without them.
He may find it a convenience to have numbers to make sure that any adjusting
entries later given to you go to the right place, but that is optional.

You replied correctly. You apparently clicked the "Reply to List"
option. If there is an option in your mail client to "Reply to All",
that would work also. Replying directly to a poster's email address
only is discouraged. If the "List" isn't included in the dialog others
couldn't benefit
By the way, you can enter the account number in lieu of the account
name, even if the account number isn't part of the name. (This is true
in 2.6.19; I assume it's still possible in 3.x.)

history since then in one file. I am running gnucash on MacOs in German which

The way I did it:
(1) Right click on the Assets class and choose New Account
(2) In the window that appear

The truthful answer is that, unless you closed the file without saving,
they're wherever you put them. But that's not terribly helpful. :-)
Simplest thing is to let GC find them for you. Go into the Accounts page
and press Ctrl+F. This will initiate a search of all transactions in all
accounts. I

were not recognized automatically and a date enterd in 2018 coiuld appear in

open with the bottom buttons barely visible and unusable until I drag the box
